Sông Cái Khà Yellow Rice Wine is an 18-month old Rượu Cái, or Vietnamese rice wine, made entirely from glutinous rice fermented with microbials (yeast, fungi, bacteria). Distinguished by tart complex acidity and layered umami and nuttiness. Drinks similarly to an oloroso sherry or vin jaune and historically used in cooking (freshwater seafood or game) or enjoyed with, before, or during, meals.
