Dê Hot Sauce Bird’s Eye Chili & Black Garlic is a complex smoky hand-crafted HOT sauce.
This hot sauce has a unique taste because the ingredients are hand-selected and the processing method is also different from other hot sauce.
Instead of using traditional smoked wood chips, Dê use bagasse to smoke the chilies. Sugar in the remaining bagasse will be burned, evaporated with steam and smoke, clinging to each chili. The caramel and smoky flavours will be more intense.
This hot sauce is a fusion between the heat of World’s hottest pepper – Carolina Reaper – and Vietnamese chili pepper; together with many layers the flavours from the aroma of chilies to the sweetness of brown sugar, the sourness of apple cider vinegar, smoky flavour from bagasse… But the most special and satisfying ingredient that take me a lot of time researching and testing is Black Garlic, it complete the sauce with earthy and rich Umami flavour.
