Cheese Kotthu is made up of homemade paratha (a thin flatbread), cut into small pieces or ribbons, Mozzarella cheese, scrambled egg, and vegetables, all of which are chopped up and mixed together using blunt hand-held cleavers whilst they sauté on a hot griddle.
