Hopperlettes with Sambol. Hoppers are thin, bowl-shaped pancakes made from rice flour and ground coconut, named for the pan that gives them their form. For Hopperlettes the crispy basins are filled with an omelette mix just as the batter is starting to cook. Served with Katta Sambol (Maldivian dried fish relish) and Pol Sambol (coconut relish).
