Plain Hoppers with Sambol. Hoppers are the hot new pancake, “the love child of a crêpe and a crumpet”, bowl-shaped and made from rice flour, they are golden and crisp at the edges, and doughy in the centre. Served with Katta Sambol (Maldivian dried fish relish) and Pol Sambol (coconut relish).
