Egg Hoppers with Sambol. Hoppers are thin, bowl-shaped pancakes made from rice flour and ground coconut, named for the pan that gives them their form. These crispy basins cry out for some kind of filling, so as the batter is starting to cook, a whole egg is cooked in the middle. Served with Katta Sambol (Maldivian dried fish relish) and Pol Sambol (coconut relish).
